Tofu Bhurji
Tofu bhurji is the vegan answer to paneer or egg bhurji, and it is usually a little lighter for the same protein. It is quick, high in protein, low in carbs, and takes vegetables and spices well.
A pinch of black salt gives it a familiar egg-like flavour if you want it. Serve with a single roti and salad, or on its own as a low-carb plate.

Why this is weight-loss-friendly
Tofu is high in protein and dairy-free, and a low-oil bhurji is filling and low in carbs. It is a good vegan alternative to paneer or egg bhurji for fewer calories per gram of protein.
Substitutions
- Add chopped capsicum or spinach for more volume and fiber.
- A pinch of kala namak (black salt) gives it an egg-like flavour if you like.
Variations
- Wrap it in a single roti with salad for a portion-friendly meal.
Storage & meal prep
Keeps 2 days refrigerated. Reheat gently.
Press and crumble tofu ahead so this is a 10-minute meal.
Common mistakes
- Not pressing the tofu: it stays watery and will not brown. Press out the water first.
- Too much oil: two teaspoons in a non-stick pan is enough.
