Tofu bhurji is the vegan answer to paneer or egg bhurji, and it is usually a little lighter for the same protein. It is quick, high in protein, low in carbs, and takes vegetables and spices well.

A pinch of black salt gives it a familiar egg-like flavour if you want it. Serve with a single roti and salad, or on its own as a low-carb plate.

Ingredients

  • 200 g firm tofu (crumbled)
  • 1 small onion (finely chopped)
  • 1 small tomato (finely chopped)
  • 1 tsp ginger-garlic
  • to taste turmeric, red chilli, salt
  • 2 tsp oil
  • 2 tbsp coriander leaves (to finish)

Instructions

  1. Press the tofu to remove excess water, then crumble it.
  2. Heat the oil and saute the onion and ginger-garlic until soft.
  3. Add the tomato and spices and cook until the tomato softens.
  4. Add the crumbled tofu, toss for 3-4 minutes until heated through, finish with coriander, and serve.
